After four weeks of not being able to eat real food aside from sips of liquids, hard candy, popsicles, and ice, I have really enjoyed rediscovering food! During my time with minimal diet, I did a lot of cooking, baking, reading cook books, and viewing yummy food pictures on Instagram. Now that I can eat, it is AMAZING!!! I have so many things I want to try! When I couldn’t eat, everyday I would make a list of all of the things I want to eat. There was a lot of repetition of regular things like pizza, Jimmy Johns turkey sandwich, Bub’s breakfast bowl, etc…, but I also put things on the list that I found in cookbooks or saw online. It has been fun to look at the lists and decides which one of those food dreams I want to make a reality each day. It sounds so silly that being allowed to eat can bring so much joy, but also the potential for so much pain. So far, I have not had any major issues with advancing my diet. I have had some less than optimal belly days, but nothing I can’t handle. To share my excitement and joy for cooking and eating, I have been documenting all of my meals on my Instagram story. I am excited to see what the week will bring!
